Winemaking Notes

The vineyards are cultivated in the Bree River in Worcester. This well-known river is the main source of irrigation water for the farmers in the area. Grapes were machine harvested midway through January. Upon arrival at the cellar the bunches were de-stemmed and immediately pressed to avoid any colour extraction from the pink-grey grape. The juice is cold settled for 72 hours before it is racked from its sediments and inoculated with pure yeast cultures. Cold fermentation at 12°C locks in freshness and ensures an intense fruit bouquet. After fermentation, the wine is kept on the gross lees for 4 months. This practice adds weight and texture to the palate. Wines from 4 different vineyard blocks are carefully blended and filtered before bottled.
