Journeys End ‘Haystack’ Chardonnay 2023
R125.00
We undergo a number of organic and Bio-dynamic practices on the farm. Aside from being the second wine farm in SA to be solar powered, we undertake some age old practices such as the planting of crops between vineyard rows (to prevent weeds and therefore reduce the need for spraying), the introduction of Barn and Eagle owls (to control rodents), all play their part in ensuring nature and the environment are preserved and protected.

HAYSTACK CHARDONNAY (UNWOODED) 2023
W.O. Coastal Region
Winemaking Notes
The grapes were handpicked between 21 and 23° balling before being subjected to a combination of whole bunch pressing as well as destemming and gently pressing the other portion. The juice was left to settle for 24 hours enzymatically before being pumped into (90%) stainless steel tanks and older 300L French oak (10%) for fermentation. Different yeasts were used to enhance the flavour profile of the wine. Fermentation took about 25 days at temperatures ranging between 11 – 14 ˚C. The wine was then left in stainless steel tanks at low temperatures for a total of four months post-fermentation with weekly lees stirring to broaden the mouthfeel and enhance the wines preservation. After maturation the wine was fined, filtered and bottled. We fine the wine with bentonite which means our wine is vegan friendly.
Tasting Notes
Clear and bright straw coloured with a hint of green. Pronounced citrus peel, lime and melon flavours on the palate. The balance between creaminess and freshness makes for a food-friendly wine, ideal with sushi, creamy dishes and seafood. Drink now and up until 2025.
